10 Minute Creamy Black Bean Soup

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup water
  • 1 garlic clove
  • 1/2 teaspoon salt
  • Splash of lime juice
  • 1 tablespoon taco seasoning
  • 2 tablespoons Greek-style yogurt
  • Parsley (optional)


  1. Combine first 6 ingredients (through taco seasoning) in a small saucepan. Bring to a boil and cook 8 minutes. Remove from heat. Stir in yogurt. Puree with a hand blender until smooth. Garnish with parsley, if desired.
