All of a sudden, jackfruit seems to be the "it" ingredient. This exotic fruit from Southeast Asia, the largest known treeborne fruit, is being hailed as a "miracle" crop that could save millions from starvation. Researchers are excited about jackfruit because it's a large, hardy fruit -- resistant to pests and drought -- and has impressive nutrition credentials.
One of the most unique features, though, is the ability of jackfruit to take on the properties of pulled pork when cooked. Don't know of another kind of fruit that does that!
London has been enjoying jackfruit transformed into vegan street food for several years. Some U.K. experts believe it will be the next big food craze. Jackfruit has been hard to find here in the U.S., except fresh and canned products in Asian markets -- although expect to be hearing a lot more about jackfruit in the months to come.
