Can you cook fish in the microwave? Yes! Here's how...

I know when my friend Deanna reads this she’s going to be mortified that I chose smoked paprika as my “Scary Spice” for this month’s ReDux. Deanna is a self-proclaimed smoked paprika lover.
I, on the other hand, never use the darn stuff. Why? I dunno… habit? I tend to grab my arsenal of favorite flavors in cooking — chipotle powder, basil and rosemary… Wow. I'm really that boring....
This month’s ReDux is all about challenging you to grab those spices from the back of the cupboard and give them the love they deserve. Pulling out the sage only to make dressing (or stuffing as you Nothern folk like to call it) once a year is a waste of good flavor when there are recipes like these just waiting to be made.
There’s also a neglected appliance hanging out in your kitchen that you’ll want to dust off for this recipe as well. You’ll note that I’ve opted to do the unheard of this month— I’m using the microwave for more than just popcorn and leftover reheating. I discovered this truly amazing quick-and-easy way to cook fish from the seafood department at my local Publix. I was so skeptical the first time I tried it. But friends… I promise you. You’ll be amazed the first time you cook fish in the microwave. It turns out moist, not-overcooked and just the right amount of flakiness… and in like 3 minutes!! Seriously… I may never cook fish in the oven again. It’s just too easy not to love. So break out that spice you’ve never tried before and consider giving your microwave a chance to… and this could be dinner on your table tonight.
Simple Microwave Salmon
- 2 salmon fillets
- 2 teaspoons olive oil
- 2 teaspoons lime juice
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt
- 2 teaspoons honey
- Place salmon in a small microwave safe dish. Combine remaining ingredients in a small bowl; spoon over salmon.
- Cover and cook on MEDIUM (50%) power in microwave 2 to 3 minutes, in 1 minute intervals or until cooked to desired degree of doneness.
