There’s a neglected appliance hanging out in your kitchen that you’ll want to dust off for this recipe. I’ve opted to do the unheard of — I’m using the microwave for more than just popcorn and leftover reheating. I discovered this truly amazing quick-and-easy way to cook fish from the seafood department at my local Publix. I was so skeptical the first time I tried it. But friends… I promise you. You’ll be amazed the first time you cook fish in the microwave.
It turns out moist, not-overcooked and just the right amount of flakiness… and in like 3 minutes!! Seriously… I may never cook fish in the oven again. It’s just too easy not to love. Simple Microwave Salmon
- 2 salmon fillets
- 2 teaspoons olive oil
- 2 teaspoons lime juice
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon salt
- 2 teaspoons honey
- Place salmon in a small microwave safe dish. Combine remaining ingredients in a small bowl; spoon over salmon.
- Cover and cook on MEDIUM (50%) power in microwave 2 to 3 minutes, in 1 minute intervals or until cooked to desired degree of doneness.
