Sriracha Salmon and Blue Cheese Stuffed Celery sticks are a healthy and tasty upgrade over classic Buffalo wings.
I don't have to tell you how popular Buffalo wings are, right? I mean, there are entire restaurant chains devoted to the simple appetizer. I've even flirted with the call to turn cauliflower into "wings" in our last contest with Real California Milk. And while we probably all agree that wings are wings and anything else is just an imposter, I say if that imposter is just as tasty (or even more so), then sign me up.
The classic combo of heat from the wing sauce paired with the creamy and tanginess of ranch and blue cheese is honestly what makes wings so special. I've taken all of that and gone a step further by piling it all up in a crunchy celery stick AND upgrading by making this with salmon and Sriracha. (And before you think salmon is a weird choice, I promise you it's DELISH. You may be surprised to see that I used canned salmon, but I've grown to love it. If you're freaked out by the tiny bones, then opt for one of the packets of salmon, which are usually free from bones. Or use leftover, if you have it.) Finally, I've topped it all off with the amazingly unique bold, rich flavor of Real California Blue Cheese.
Now, a word about what prompted today's recipe. As I shared earlier in the week, Real California Milk challenged Recipe ReDux members this week to come up with their favorite snack recipes. Around my house "snacks" are usually appetizers before dinner. I actually prefer that term with my kids. I want them to understand that when we eat after we get home from school, we're really just priming our tummies to eat dinner ('cause I've learned the hard way that hefty after school snacks can lead to skimpy dinner eating).
We don't all necessarily eat the same appetizers before dinner (You can read here about how we DO all eat the same thing for dinner), so this is actually MY appetizer, not theirs. My kids have a plethora of dairy foods they love, but neither has graduated to blue cheese yet and my youngest hasn't graduated to Sriracha.
But knowing how good these taste, that's totally okay in my book. #MoreForMe

Sriracha Salmon and Bleu Cheese Stuffed Celery
Serves 1 to 2
- 1/4 cup drained canned salmon
- 2 tablespoons ranch dressing (I used Simply Dressed by Marzetti)
- 1 teaspoon Sriracha
- 1 1/2 tablespoons crumbled Real California Blue Cheese
- Garnishes: additional Sriracha and chopped fresh parsley or green onions
- 2 large celery stalks, cut in half
- Combine salmon, dressing and Sriracha in a small bowl. Spoon into celery stalks. Sprinkle with blue cheese and garnish, as desired.
