Holiday food memories -- we all have them. Whether it's the way our mother's dressing is a standing request from the entire family, the dessert table that makes you abandon all reason of becoming a dietitian, Nana's sweet potato souffle with a candied pecan topping rivaling the best nut brittle you ever ate. These are the things cherished holidays memories are made of. 

But can we all agree -- some things about holiday memories lack a bit to be desired. Whether it's the obligatory bowl of English peas (read my thoughts on English peas here), the way we still have get to sit at the kid's table at 30++ years of age, the way our uncle rushes in just before the blessing and rushes out as people are putting that last bite of dessert to their mouths... or my favorite, the soup-casserole cascade of veggie dishes that reminds you of all the reasons you did, in fact, become a dietitian.

I'm fairly certain knowing what I know about folks and real-life that we all have things about the impending holiday that lack a bit of holiday inspiration.

But fear not. When it comes to what's being served on that treasured Thursday just a few weeks away, the members of the Healthy Aperture Blogger Network have teamed up with the Soyfoods Council to provide you with more than enough healthy holiday inspiration with our #SoyInspired for Thanksgiving Campaign.

Why #SoyInspired? Soyfoods can be an excellent source of lean complete protein. And bonus -- soy foods are typically very mildly flavored, meaning it's easy to work them into rich- and boldly-flavored holiday dishes for a healthy boost ... without sending your family into cries of "Who brought the healthy dish for Thanksgiving?!?"

And what better way to kick things off than with Pumpkin Pie Milkshakes. I mean, pumpkin gets a green light this time of year no matter how you serve it, yes? But what I love about this recipe for the holidays {beyond the healthy spin} is that it's super kid-friendly. If I'm gonna be sitting at the kids' table, then by golly I better have a yummy dessert to go with it, ya know?

We’re #SoyInspired for Thanksgiving Starting with Pumpkin Pie Milkshakes

Pumpkin Pie Milkshakes

Yield

Serves 4

Ingredients

  • 3 large bananas, frozen
  • 1 1/3 cup vanilla soymilk
  • 1/2 cup pumpkin puree
  • 1/4 cup ice cubes, optional
  • 1/4 teaspoon cinnamon
  • couple dashes nutmeg and ginger
  • 4 oz soy cream cheese, plain
  • 3 Tablesoons powdered sugar
  • 1/2 teaspoon vanilla
  • 3/4 cup walnuts
  • 6 graham crackers, crumbled into course flour
  • 1 1/2 Tablespoon coconut oil, melted
  • 1 1/2 Tablespoon vanilla soymilk

Directions

  1. First make the crust: Finely chop walnuts until they reach a sand-like consistency.  Combine walnuts, graham cracker crumbles, coconut oil and 1 1/2 Tbsp soy milk.  Set aside.
  2. Next make the frosting:  In a separate bowl, use an electric mixer to combine soy cream cheese, powdered sugar and vanilla.  Set aside.
  3. Finally, make pumpkin milkshake: In a blender, combine bananas, soy milk, pumpkin, ice cubes, cinnamon, nutmeg and ginger until smooth.
  4. Assemble: dip the rim of 4, 8 ounce glasses into the frosting.   Then dip the glasses into the crust mixture to line the rim. Divide the remaining crust between the 4 glasses (save a tiny bit to garnish the tops) and use a spoon to press it down. Divide the pumpkin milkshake between the 4 glasses.  Serve topped with your soy cream cheese and graham cracker crust crumbles.
