A Slow Cooker Cinnamon Raisin Granola recipe with just the right amount of crunch and sweetness -- no oven required.
I saw the other day where a fellow blogger said that slow cooker season is year-round at her house.
I couldn't agree more.
I honestly don't understand why people seem to only think of slow cookers 1) during cold weather and 2) as an appliance only suitable for roasts and chili. As you probably recall, this isn't the first time I've shared this sentiment, but I still bristle when I see things like "now that the weather is cooling off, dust off your slow cooker!"
I mean, really, folks. If you've ever heated up an oven during the dead of summer in Georgia you'd understand that a slow cooker is PERFECT for when your air conditioning has been running 'round the clock and simply can't keep up.
Today's recipe for Slow Cooker Cinnamon Raisin Granola is definitely one of those "you could cook this in an oven, but why would you" type recipes. It's so much easier (and energy efficient) to plug in your slow cooker for a few hours and pull off the lid every little bit to give it stir. Opening a hot oven for something like this is just more heat than I want in my kitchen right now.

That recipe turned out so good, I wanted to try a new taste. I specifically created this recipe for my mom while home in Alabama on a recent visit. She's become a new *avid* fan of Cabot Creamery's vanilla Greek yogurt. (Yes, they're a client, but she discovered it on her own.) And when visiting her I found her granola choices to be sub-par.
I, of course, was like "Um, mom... you know, you could just make your own." And voila! Here's what came about -- a classic buttery, nutty granola with just the right amount of cinnamon sweetness... no hot oven required.

Slow Cooker Cinnamon Raisin Granola
Makes 8 servings
- 1/2 cup butter
- 1/4 cup brown sugar
- 1/4 cup honey
- 3/4 teaspoon ground cinnamon
- 3 cups old-fashioned oats
- 1 cup chopped walnuts
- 1 cup raisins
- Pinch of salt
Melt butter in a microwave safe bowl; add sugar, honey and cinnamon, stirring until smooth.
Combine oats and remaining ingredients (except raisins) in a slow cooker. Add butter mixture, stirring until well coated.
Cover slow cooker but leave slightly open to allow steam to escape.
Cook on HIGH 2 1/2 to 3 hours, stirring every 30 minutes (be careful not to burn.) Stir in raisins. Spread hot granola out on a baking sheet and let cool (will harden as it stands). Store in an airtight container.
