Use light mango passion fruit juice, fresh mint and lime juice with vodka to make this Skinny Mango Vodka Mojito.
I don't usually consult my husband for matters pertaining to this blog. He's certainly not the foodie of the house (although he fancies himself a hell of a spaghetti sauce maker. So there's that.)
But this month's Recipe ReDux is all about memorable vacation meals. And since he's accompanied me on nearly every vacation I've been on in the last 20 years, I figured he'd be a good person to refresh my memory.
Only, I didn't *really* need it refreshed. I always had this in mind...
...when I asked him, "What's the most memorable thing we've ever had to eat or drink on vacation?"
He didn't even pause to think before replying "that mango mojito in San Diego?"
And of course, I replied "Yep. Good answer."
We've had some amazing food together. In fact, just the past summer I enjoyed a roasted trout dish in Florida that will go down in history as one of my all time faves. There was coffee ice cream on Bainbridge Island. And a banoffee pie that we remember for its taste, but not its location. #ThisIsYour40s.
But the minute the question was posed by my fellow ReDuxers "What's your most memorable vacation meal," my mind went to a poolside beverage (I'm not sure what that says about my ability to discern the difference between a meal and a drink, but hey... I'm one of the co-founders of ReDux, so I get a little wiggle room, you know?)
I feel certain the liberties I've taken with this drink have rendered it a bit different than the original. I'm using (admittedly) less fresh mango, have substituted vodka (because we don't actually keep rum on hand #NotAFan) and topped it off with my new fave low cal tropical drink.
But what resulted was a drink that, even from our home here in Georgia away from the poolside luxury of San Diego, tastily reminded us both of that first sip on a warm early fall day some 6 years ago. It's a drink I'd gladly create over and over... just like taking that trip again. That's the thing about memorable vacations and memorable meals... they always leave you wanting more.

Skinny Mango Vodka Mojito
- 1/4 cup cubed mango
- 6 to 8 mint leaves, torn
- 1 tablespoon lime juice
- 1 cup crushed ice
- 1 1/2 ounces vodka
- 1/2 - 3/4 cup Minute Maid Light mango passion fruit drink
- Mint leaves (for garnish)
- Combine mango, mint and lime juice in bottom of a tall glass; muddle with a spoon.
- Add ice and top with vodka and fruit drink. Garnish with additional mint leave, if desired.
