Self-Rising Chocolate Chip Berry Muffins

I'm not the best mom in the world.
I've come to accept that I'm not the mom who does fun crafts or volunteers frequently at school. I don't really enjoy board games and you can forget me gettin' out in the backyard to throw the football (and it's not because I'm not asked. A lot.)
But what I lack in some memorable mom moments, I hope I make up for in food mini-traditions.
Things like Panera Friday... the weekly breakfast visit my boys and I have been doing since my youngest was in pre-K.
Pancake Wednesdays... a weekly breakfast tradition we enjoy that helps get us over the midweek slump. (My boys are a lot more excited to hop out of bed when they know hot buttermilk pancakes are waiting downstairs).
I've recently added in Cinnamon Rolls Sundays... a new addition that popped up after I reclaimed my long lost bread-maker.
And then of course, there's Muffin Monday... when I make a batch of muffins to start the week and use for snacks later in the week.
Today's recipe is what I served this week for Muffin Monday:
While I often fall back on this particularly quick and easy blueberry muffin recipe on Mondays (I sub in whole wheat flour for half of the recipe), I went a different route this week, thanks to The Recipe ReDux.
Today marks the end of the 2017 season of ReDux and as is our tradition, we challenged members to grab a book and cook from it. I grabbed my go-to classic "Ultimate Southern Living Cookbook" and turned to page 17 (this is part of the ReDux fun... we turn to a page that relates to the year we're ending). But on page 17, I found no recipes. It was just an intro glossary of pantry staples.
What I did find, though, was an entry for self-rising flour. Knowing that there was a self-rising flour recipe on KingArthurFlour.com I'd been wanting to make, I took some liberties with the theme and used page 17 as a jumping off place to take this recipe and make it my own.
Part of the "tradition" whenever I serve something new in my house is to receive a rating for the dish, Dancing with the Stars style. My boys hold up an imaginary card with a number rating (you think blog audiences are tough? Try having a test tasting panel at every meal!) These muffins scored a 9 3/4 out of 10, making them a definite addition to our Muffin Monday line up. Like me, they're not perfect. But they're close enough that no one is complaining.

Self-Rising Chocolate Chip Berry Muffins
Yield
Makes 9 muffins
Ingredients
- 1 1/2 cups (170 g) self-rising flour (I used King Arthur)
- 1/2 cup sugar
- 1/2 cup dried mixed berries
- 1/4 cup mini chocolate chips
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/3 cup canola oil
Directions
*Recipe adapted from King Arthur Flour
- Preheat oven to 350°F. Coat 9 muffin cups pan with cooking spray or line pan muffin cups.
- Whisk together flour and sugar; stir in dried berries and mini chocolate chips.
- In a separate bowl, combine egg, vanilla, buttermilk and oil. Add to dry ingredients and stir until combined; do not overmix.
- Scoop batter into prepared muffin cups.
- Bake for 20 to 25 minutes or until lightly browned. Remove from oven and let cool.
