Kimchi is a staple in our house. We treat it like a condiment and love finding new ways to use it. I’ve added kimchi to my salads and Buddha bowls. I've dolloped it onto chili, mixed it with my scrambled eggs, and tossed it with roasted vegetables. I’ve topped my husband’s hamburger with it, replaced his slaw with it, and snuck it into fried rice. Of course I also just eat it straight from the jar!
Sneaking kimchi into your diet is a good thing. It’s a delicious and healthy fermented food with many health benefits. It provides a rich source of natural probiotics and is known to promote a healthy digestive tract and improve regularity. Not just good for its probiotic properties, it also contains cabbage (a cruciferous vegetable), garlic, ginger, and red pepper powder, all of which are nutrient superstars in their own right.

Sauteed Kale with Kimchi
- 1 bag frozen kale, chopped
- 1 Tbsp Olive oil
- 1 cup kimchi, prepared
- sea salt and pepper
- Place kale in a microwave safe dish and cover. Heat according to package directions. Heat olive oil in a large skillet. Place cooked kale in skillet and toss with oil. Add kimchi and toss until well combined and heated through. Season with salt and pepper. Serves 6 as a side dish.
