Roasted Beet and Goat Cheese Crackers

Only four ingredients needed for this easy, flavorful, and filling snack or appetizer that takes minutes to make thanks to pre-roasted beets.
Time is money, and when it comes to saving money on your food costs, time is definitely a factor.
I am all for making things myself... kombucha, chicken biscuits, nut milk, cold brew coffee (for making your own pumpkin spiced lattes), and much more. However, there are times that it doesn't make sense for you to stress yourself out trying to come up with an extra hour in the day to make your own whatever.
In my case, I am just finishing my 7-day road trip and move to San Diego, and I'm quite overwhelmed with all the tasks involved in a vacation plus a cross-country move. Needless to say, making things from scratch isn't on the books for the next week or so. I have no interest in adding any extra unnecessary stress. Trying to figure out how to put together a chair without stripping all the screws is causing enough of that.
However, one must eat, and if I'm going to eat, it better taste good. And while it better taste good, it also needs to help me feel nourished and energized. For me, that always means produce.
Thankfully, I found roasted beets peeled & packaged all pretty for me. Then I grabbed some flavored goat cheese. The goat cheese need not be flavored, but I love a good garlic & herb goat cheese. I like the added flavor, especially when I'm only using a few ingredients.
Me using pre-roasted beets doesn't mean you can't roast your own beets. That's obviously a great option if you have the time. However, it's a good thing to look for convenience items that help make your life a little easier when trying to prepare meals, and pre-roasted beets are a great option. Other "convenience" foods I love are frozen veggies, canned beans & veggies, and even canned salmon.
This tasty 4 ingredient snack (or appetizer) recipe requires minimal effort and cooking time. Well, there's no cooking time but you'll spend just a few minutes slicing the beets and spreading goat cheese on crackers. And by a few minutes, I seriously mean like 3 minutes to make these. The recipe can basically be written in one sentence: Spread goat cheese on a cracker, and top with a beet slice and a walnut.
Done. Eat. Enjoy spare time saved by using pre-roasted beets, or maybe spend extra time trying to figure out how to take apart the cabinet drawer that you put together upside down so you can fix it...
I enjoyed these while sitting on my freshly made patio chairs (and praying that I didn't crumble to the ground because I'm not positive I put this together correctly) enjoying the last few minutes of sunlight. Delightful and flavorful. Just be careful that the beets don't stain anything. Those little devils want to stain their pretty pink color on everything.

Roasted Beet and Goat Cheese Crackers

Serves 1
Ingredients
- 1 ounce whole grain crackers (about 10-16)
- 1 medium roasted beet
- 1 ounce garlic and herb goat cheese (about 1/4 cup)
- 1/2 ounce walnuts (about 7-8 walnut halves), broken in half
Directions
- Place your crackers on a plate. Slice the beet in half lengthwise, and make enough slices for the amount of crackers you have. (ex: 14 slices of beets for 14 crackers)
- Spread goat cheese onto crackers.
- Top with a roasted beet slice and a piece of walnut. Repeat with remaining ingredients. Enjoy!
Notes: *I had 14 crackers, so I sliced the beet into 14 pieces and used 7 walnut halves that I broke in half. *This recipe is easy to double, triple, or for however many people you need.
