In a perfect world, my freezer would be stocked with 50+ bags of make ahead, ready to prepare freezer meals. 

In a perfect world, I would also be about 6 inches taller, run much faster and have kids that remembered their soccer ball for soccer practice, instead of pulling into the parking lot saying "Mom, where's my soccer ball?" #TrueStory

My point?

We do not live in a perfect world. 

I envy all the Pinterest-Perfect women who manage to stock their freezer with bags upon bags of meals that make meal time a snap. But I am not that woman. As I type this, I'm borderline child endangerment for how little food I have stocked in my kitchen (shocking as a food blogger, but it happens.) I would love to convince you that I know every meal, every morning before the day starts. But a lot of times, I'm winging it just like many of you are. 

That's not to say my cupboard is always bare. There are plenty of times when I have 3 cartons of eggs in my 'fridge, 2 loves of bread and enough milk to feed a Kindergarten class. And when those times present themselves, I try to get "a little bit" ahead of the game with some form of food prep. 

My food prep can take shape in many ways -- I often preboil eggs, make muffins and breads, cut up fruits and roast veggies and meats. But this month, I caved to the freezer meal pressure (thanks to our own Recipe ReDux theme) and prepped this little gem:

Frittatas may not seem like a natural choice for a freezer meal. In some ways it's like, "What's the point?" I mean... as long as you have eggs, greens and cheese, they're a snap to whip up in no time. 

But you see for me, the issue isn't always the time at the stove. It's the time to load up kids, head to the grocery store, yell at them to  politely request that they behave at the grocery store, bag up my groceries (I shop at Aldi most of the time. Love the prices and quality. Don't love the bagging), drive my groceries home, unload my groceries and then... only then... get dinner started. 

It's just easier to grab a bag out of the freezer, you know? I guess people flock to Pinterest for a reason....

Make Ahead Kale and Feta Frittata

Yield

Serves 4 to 6

Ingredients

  • 8 eggs, lightly beaten
  • 3 cups fresh baby kale or spinach leaves
  • 4 ounces crumbled feta
  • 2 tablespoons heavy cream
  • 1 1/2 teaspoons dried dill
  • 1/2 teaspoon Kosher salt
  • 1 teaspoon butter

Directions

  1. Combine first 6 ingredients (through salt) in a large zip-top bag and freeze until ready to prepare. 
  2. When ready to prepare, thaw contents in bag. 
  3. Preheat oven to 350 degrees F. 
  4. Heat a small oven-proof skillet (I used cast iron) over medium heat; melt butter. 
  5. Pour content into pan and rearrange kale if needed. Do not stir. Cook on stove for 5 minutes. 
  6. Place in oven and continue cooking 30 to 40 minutes or until set.
