Celebrate your next birthday with this recipe for Wild Blueberry Orange Blossom Honey Cupcakes for dessert!

Three years ago today, I sent an email to a small group of friends with the title “Healthy Aperture is live.” I guess you’d say it was a “soft launch”… we didn’t officially start promoting the site until a few days later. But for me, October 14th will always be our Birthday.

Some people call a day like today a blogiversary. But I honestly feel like launching Healthy Aperture was more like a birth, than a marriage. And to be accurate, we didn’t even add this blog until a few years later. So, whatever you want to call it, today’s the day… and I’m still amazed at how much the site has grown and continues to grow.

Rather than recap a lot of stats about the site that probably only I and a handful of other supporters would care about, I thought we’d celebrate instead with a very special cupcake. It’s a little something I conjured up after a whirlwind set of back to back trips this August to visit Maine with Wild Blueberries** and then on to California with Almonds**. What may seem like two totally unrelated crops are actually Coast-to-Coast cousins in a way… very different in the terrain they enjoy, they share one thing in common — the honey bee. Wild Blueberries and Almonds are the #2 and #1 crops, respectively, that rely on the honey bee for pollination. I’ve married all three in this quick and easy cupcake in honor of our Birthday today.

And if I may get a little "deep" on ya for a second, this cupcake is a bit symbolic, too, of how Healthy Aperture has grown these past three years. What may seem like two divergent worlds: "food porn" and "healthy food" are what the Healthy Aperture team marries together every day -- reviewing thousands of submissions over countless hours of review. But none of the growth would be possible without all of YOU -- our faithful bloggers and visitors who help pollinate a healthier world by spreading the word about our humble little site. So this little cupcake is as much about celebrating you and what you mean to us as it as about just saying "Happy Birthday Healthy Aperture!" Thank You for helping us make the food blog world a little bit better, one beautiful {healthy} image at a time.

**Look for follow up posts very soon about the details of both of the trips I mentioned above.

Wild Blueberry-Orange Blossom Honey Cupcakes

12 cupcakes

  • 1 box gluten-free cupcake mix
  • 1 teaspoon almond extract
  • 1 cup frozen wild blueberries
  • 1 cup slivered almonds
  • 1 tablespoon orange blossom honey
  • Honey Buttercream Frosting (I used orange blossom honey and added 1 teaspoon orange zest)
  • Garnishes: wild blueberries and orange slices

  1. Prepare cake mix according to package directions; stir in almond extract. Preheat oven according to packaging directions and set batter aside.

  2. Pulse wild blueberries, almonds and honey in a food processor until finely chopped.

  3. Divide 1/2 of batter evenly among 12 cupcake tins; spoon wild blueberry mixture onto center of batter. Top with remaining batter.

  4. Bake according to package directions (I baked my cupcakes on the high end of the time range).

  5. Let cool and top with Honey Buttercream Frosting. Garnish, if desired.
