When I got married, I had these grand visions of beautiful dinner parties served on gorgeous china plates with elaborate etched crystal glasses. You know the stuff I'm talking about right?
Well come to my house and I'll show you cabinets full of the stuff. It never gets used.
I blame my unmillennial-ness. I'm on the tailend of a generation that registered for that kind of thing without the knowledge that we would not, in fact, ever use it. I could finance a small start-up with the money I have invested in fancy dishes.
But I won't. Remember, I'm not millennial.
All that said, I'm also not afraid to conform to more appealing ways to serve guests and entertain. Case in point -- today's turkey recipe, which I consider a modern-day spin on a "stuffed turkey."

But don't misunderstand... I'm all for the big Tom Turkey on your table this Thanksgiving, if you have the room and the guests to enjoy it all.
But my little family is fairly small and this year, I'm not really sure that we need the biggest bird. Instead, I'm thinking we'll be "stuffing a turkey" a new way...
...and who knows, we may even break out the fancy dishes.

Gouda and Apple Stuffed Turkey Breasts
Makes 4 servings
- 1 pound turkey breast, (4 oz. pieces)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon fresh thyme, chopped
- 1 sweet apple, thinly sliced (like honeycrisp, pink lady, or gala)
- 4 oz. Gouda cheese, shredded
Preheat oven to 400°F.
Using a sharp paring knife, carefully butterfly (starting at the thicker end and ending at the thin point, being careful not to cut all the way through the other side) each turkey breast. Open the turkey breast exposing the inside, resembling the shape of a butterfly.
Sprinkle one side of the turkey breast with Gouda cheese. Top cheese with apple slices. Gently, fold the turkey breast. (Use toothpicks to secure, if needed)
Brush outside of turkey with olive oil and season with salt, pepper, and thyme.
Coat an oven safe grill pan (or sauté pan) with cooking spray. Heat over medium high heat. Place chicken, top side down, into the pan. Let turkey sear for 2-3 minutes; then flip. Cook for an additional 2-3 minutes.
Transfer pan into the oven and cook for an additional 10-15 minutes, until internal temperature of turkey reaches 165 degrees F. (Cook time will vary depending on thickness of turkey breast)
Serve warm with your favorite sides.
