With only 4 ingredients this Gluten Free Brownie Banana Bread is an easy dessert recipe perfect for everyday baking or special enough for any occasion.

My holidays have already been food- and family-filled, so much so that I'm a few hours late posting for the ReDux. I'm thrilled this year to have a chance to entertain more of our extended family than usual, but cooking from dawn to dusk the last few days has ironically left me with little time to perfect new creations.

This month's ReDux is dedicated to all the delicious dishes members will be adding to their dessert tables this Thanksgiving. I've drooled my way through a few of my favorites that I'm dying to make, like this Gluten Free Cranberry Slab Pie by my friend Gretchen @ kumquat.

But let's be honest. A dessert table is called a dessert table because it's meant to have multiple yummy choices. The thing is that cooking tons of desserts can take tons of time, unless you rely on a few "quick fix" desserts to round out the table.

And that's where this recipe comes in:

This Gluten Free 4 Ingredient Brownie Banana Bread is crazy easy and a fun addition to your dessert table, especially for gluten free guests (like my husband) who often get overlooked when it comes to baked holiday goods. Where gluten free baking can sometimes be a little temperamental for even proficient bakers, starting with a gluten free brownie mix takes the guess work out of baking up a bread that's moist, but not gummy, sliceable, but not dry.

Plus, the banana and chocolate combo is special enough to take this beyond simply whipping up a box of brownie mix for guests. And if you have it in your packed cooking schedule to stir up just a few more ingredients, I highly suggest a little combo of 1 tablespoon each Nutella and peanut butter, microwaved on HIGH 30 seconds, stirred well and drizzled over the top. It will be a show stopper for sure and only you will know that in 6 ingredients got you a starring spot on the dessert table.

Makes 1 loaf (approx. 12 servings)

Ingredients

  • 2 large, ripe bananas

Directions

  1. Preheat oven to 325 degrees F. Coat just the bottom of a 9-inch loaf pan with cooking spray.
  2. Mash bananas well with a fork. Add eggs and oil; beat with an electric mixer until combined. Add brownie mix and mix until smooth. Spoon batter into prepared pan.
