Mini Frittatas

The holidays are delightful, but they can be taxing on your waistline and budget.
Fear not because I am here to help you with both!
These Mini Frittatas are cute little appetizers or handheld breakfasts. They are super inexpensive and easy. Plus, you probably have everything in your fridge.
It's like the perfect recipe: easy + healthy + inexpensive + tasty + non-fussy
Doesn't get much better than that in my book.
Eggs are a nutrient rich source of budget-friendly lean protein, and they are easy to keep in you fridge. Eggs are full of vitamins like choline, omega-3's, selenium, B Vitamins, and most of those vitamins are found in the egg yolk {so no more egg-whites only}.
Eggs are great for breakfast, lunch, dinner, and appetizers. Case in point: these mini frittatas. They could be considered a breakfast or an appetizer.
They can be as fancy or as simple as you want. Cheese, herbs, green onions, bell peppers, or whatever your heart desires {and you have in your fridge} are all welcome additions to these frittatas. Something to note though is that the more additions you add, the more mini frittatas they'll make. I used 1/4 cup of green onions and it made 12 mini muffins.
I topped them with a dollop of Greek yogurt to make them look a little prettier but that's completely up to you. All you need are the basic ingredients and you can add as much or as little as you'd like. Eggs and milk are the only two mandatory ingredients. The other ingredients are just lagniappe.
So with that, I give you this simple and basic recipe that you can use any time of year but that will be much appreciated in a time of budget constraints and health resolutions.

Mini Frittatas
Yield
Makes 12 mini frittatas
Ingredients
- 3 eggs
- 1/4 cup milk {I used 2%}
- 1/8 tsp garlic powder
- 1/8 tsp salt
- pinch of cayenne pepper
- Other additions:
- 1/4 cup chopped green onions {from 3-4 green onions}
- 1/4 cup grated cheese
- chopped fresh herbs
- For serving:
- Greek yogurt
- fresh herbs
Directions
- Preheat the oven to 350*F.
- Whisk together the milk and the eggs. Add in the seasoning {garlic powder, salt, cayenne pepper}. Stir in the additional ingredients {green onions, cheese, herbs, etc.}.
- Pour about 1.5 tablespoons egg mixture into mini muffin tins. Bake for 15-17 minutes until cooked through. Top with Greek yogurt, if desired.
Notes: These can be served warm or cold. Great to make ahead. This recpe is also easy to double or triple.
