A basic blueberry quick bread the whole family will love.
Someone told me the other day they wanted to chat about "why" I would choose to start a podcast on something OTHER than food and nutrition.
That's a reasonable question, given all of my other brands and life's work are focused on food and nutrition. But I think my answer is equally as reasonable:
Because I wanted to.
Being a recipe developer, food blogger and registered dietitian are a vitally important part of Who I Am. But they're not all I am, you know? I'm not sure when that fact jumped out to me, but the older I get the more I realize that tapping into your varied interests is as much an important part of life fulfillment as is having a job you enjoy.
I've got the "enjoy your job" part covered.
But I had begun to feel like nothing in my life (outside of taking care of my family) involved anything other than food and nutrition.
I guess the question that naturally follows though is "What makes YOU qualified to do a lifestyle podcast, Regan?"
Well, honestly, nothing really. Other than I'm alive and therefore, I have a lifestyle. And that's really all I'm sharing on This Unmillennial Life podcast -- stuff about life that interests me.
I'm not a sleep expert. Or a beauty blogger. Or a cosmetic surgeon. And I'm definitely not a CrossFitter.
But these are all topics of interest to me and to thousands of women across this country. And so, I'm talking about them. I'm podcasting. And I'm enjoying it, immensely.
So what does all of this have to do with a Blueberry-Olive Oil Quick Bread? Well, a lot really. Stay with me here.
This bread is basic. It's not exceptionally creative or new. It doesn't offer some sort of trendy nutrition topic. But it's enjoyable. My family loves it. It put smiles on faces around my house when it was eaten as breakfast, dessert and as a snack. I didn't make it because I thought it would go viral on Pinterest. I made it because I wanted to.
Sort of like why I started my podcast.

Blueberry-Olive Oil Quick Bread
Makes 16 Servings
- 1 pint fresh blueberries
- 1 tablespoon self rising flour
- 1/2 cup olive oil
- 1 1/2 cups sugar
- 3 eggs
- 1 teaspoon vanilla
- 2 1/4 cups (270g) self rising flour
- 1 cup vanilla yogurt
Preheat oven to 350 degrees F. Coat a nonstick loaf pan with cooking spray.
Toss blueberries with 1 tablespoon flour; set aside.
In a large bowl, cream together oil and sugar until light and fluffy. Beat in eggs one at a time; add in vanilla. Alternately beat in flour and yogurt, mixing just until blended. Stir in blueberries
Pour batter into prepared pan. Bake for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in pan 10 minutes; turn out onto a wire rack and cool completely.
