You shouldn't be friends with someone who tells you they hate leftovers. You don't need that kind of negativity in your life.
All jokes aside, tossing leftovers is no way to go through life. It is a huge waste of food, and I can't stand food waste. Cannot stand it.
Leftovers are delicious, and they are a great way to stretch your food budget.
Plus, leftovers can help save you time which is a huge deal to me.
This week, I've been testing and photographing multiple recipes each day, and anything that can save me from wasting food + save me time is a recipe I can get behind.
Since I only had a little leftover pork, I needed something else to add a little substance to stretch the pork.
Beans it was since there was a can of pinto beans just waiting to be used in the pantry.
Dice some veggies, add to a pot, and simmer for a while. That's it.
It's great served over rice or on a bun or even in lettuce leaves for a lettuce wrap. Whatever works!

BBQ Pork and Beans
- 1 teaspoon olive oil
- 1 medium onion, diced
- 1 small carrot, diced
- 1 stalk celery, diced
- 1 clove garlic, minced
- 4 green onions, chopped
- 1/2 cup barbeque sauce
- 3/4 cup water or chicken broth
- 8 ounces cooked pork, diced
- 1 (15 ounce) can pinto beans, drained & rinsed
- In a medium pot, heat the oil over medium heat. Add onions, carrots, and celery. Cook for 10-15 minutes, stirring occasionally, until softened and lightly browned.
- Add garlic and green onions. Stir for 2 minutes.
- Add barbeque sauce, water or chicken broth, cooked pork, and pinto beans. Stir well.
- Simmer, stirring occasionally, for 45-60 minutes until the veggies are soft and the meat is very tender.
- Serve over rice, on a bun, or in a lettuce wrap. Enjoy!
