If you found yourself wondering why Target was putting "back to school" items on store shelves in mid-July, blame the schools down South. My oldest son (a 1st grader) started back on August 6th.
Yes. August 6th.
That's crazy, right?
My youngest (a pre-K 3 kiddo) started back yesterday.
Almost as a crazy, no?
A neighbor asked me the other day if I knew a particular RD in this area. I had to confess that while I consider myself fairly well connected among my peers, the reality is my co-workers are online - the folks that read this blog, who tweet to me daily, whose Instagram pics I double tap. That's my work environment. (And no, I didn't know her. I think I only know 2 RDs in all of the Augusta, GA area. Is that weird?) One of the things I've learned from my friends and "co-workers" outside of the South is that we are ruining Back to School season. For some of you, your kids just got out for summer!
The other side of the coin in not having "co-workers" is that I'm left most days fending for lunch here at home alone. When my kids are out of school during the summer, what I eat is often dictated by what they eat... or at least, dictated by what I have the time and energy for when I'm scurrying around filling their plates and cups and marshalling ninja fights gone awry.
But yesterday, it was peace and quiet during the lunchtime hour. And this is what I whipped up.
Super simple and oh so satisfying. Pair with a grilled cheese or salad, and it's a hearty lunch. And when you work from home, you can sip and slurp your way to the bottom of the bowl... nobody's around to here you anyway

Sweet Potato Soup for One
- 3/4 cup milk
- 1/2 cup (100g) canned or fresh sweet potato puree
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- Pinch of salt
- Whisk all ingredients in a small saucepan. Cook until warmed throughout.
