Gingerbread was most definitely not on my list of likes when I was a kid. Gingerbread men? Pass. Gingersnaps or slices of gingerbread? No and no.
I’m not sure at what point in my adult years I changed my tune but now my love for gingerbread flavored anything is equivalent to the pumpkin spice craze – though the difference is I don’t start talking about it until November vs. August.
But because daily gingerbread consumption isn’t exactly kind to the waistline, I try to find ways to incorporate gingerbread flavors into more every day, good-for-you recipes like oatmeal, energy bites or smoothies.
