In case you've been living under a rock, the (affiliate link*->) Instant Pot has virtually taken over the food world... or at least the side of it devoted to quick and easy dinner recipes. In case you aren't one of the few people who's bought one and you're not sure if you need one more appliance on your countertops, read this post from Sally at Real Mom Nutrition to see what she DOES and DOES NOT like about her Instant Pot. 

Some people say the Instant Pot is a multi-functional appliance that will become your new best friend. And for good reason -- it's a pressure cooker, slow cooker, rice cooker, yogurt maker and more....all rolled into one! 

But with all that convenience comes an awful lot of recipes that don't necessarily fit the bill for a healthy dinner around. So we've rounded up our favorite Healthy Instant Pot recipes for you to try from the bloggers here at Healthy Aperture. Everything from breakfast to dinner to side dishes!

These Healthy Instant Pot Recipes are quick and easy and can save you time making breakfast and dinner.

Instant Pot Cinnamon-Raisin Steel Cut Oatmeal

Yield

Make 7 (1/2 cup) servings

Ingredients

  • 3 cups water
  • 1/4 cup raisins
  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1 cup dry steel cut oats
  • chopped pecans and milk for topping

Directions

  1. Add steel cut oats, raisins, brown sugar and cinnamon to Instant Pot; stir to combine. Add water and stir.
  2. Lock lid. Press MANUAL and set time to 3 minutes. (The Instant Pot will take 10 minutes to come up to full pressure.)
  3. Once finished cooking, allow pressure to release naturally (about 5 to 10 minutes).
  4. After pressure releases, open lid and stir.
  5. Top with pecans and milk, if desired.
