Gluten Free 4 Ingredient Brownie Banana Bread

Makes 1 loaf (approx. 12 servings)

Ingredients

  • 2 large, ripe bananas
  • 4 large eggs
  • 1/2 cup canola oil
  • 1 (16-ounce) box gluten free brownie mix (I used ALDI liveGfree)

Directions

  1. Preheat oven to 325 degrees F. Coat just the bottom of a 9-inch loaf pan with cooking spray.
  2. Mash bananas well with a fork. Add eggs and oil; beat with an electric mixer until combined. Add brownie mix and mix until smooth. Spoon batter into prepared pan.
  3. Bake for 1 hour and 15 minutes or until wooden pick inserted in center comes out clean. Let cool in pan 10 minutes. Remove from pan and cool on wire rack.
