Remember how I confessed being uninspired to blog late last year? Well you know the only thing worse? Being inspired, wanting to cook/blog and being in the bed sick, with what I am affectionately calling #SpanishFlu2015.
It just dawned on me that I don't think I've even shared on here that I recently returned from an 8-day trip to Spain. I said I was out of the country on Valentine's Day, but that hardly tells the full story. Here's a video recap, that in 5 minutes walks you through much of what I saw in the early days of my trip (Note: my trip was partially paid for as a part of my attendance at a sponsored conference, but the first few days I was on my own. That's what's covered in this video):
Anyway, upon my return from Madrid I came down with the flu. Not a cold. Not sinus congestion. The. Flu. I know it was the flu because I literally couldn't get out of the bed for days. That entire week is kind of a blur now. But suffice to say, there wasn't a lot of cooking, photographing, blogging or videoing during that time.
It seems, though, that I'm through the worst of it and have enjoyed finally being back in the kitchen over the last few days. While I was in Spain, I had some really great food (and WAY too much jamon), but I did miss my new morning microwave English muffin obsession. But I've realized since sharing this version originally, that not everyone is a sweet breakfast fan like me. Some of you guys simply have to have that dose of bacon and eggs in the morning (Let's fact it. McDonald's was able to make "McMuffin" a household name for a reason.)
So here's an updated savory variation:

Savory English Muffin in the Microwave
Makes 1 serving
- Dry Ingredients:
- 1 tablespoon coconut flour
- 1 tablespoon grated Parmesan
- 1 teaspoon golden flax meal (ground flax seeds)
- 1 teaspoon ground psyllium husks (I used EarthFare brand)
- Wet Ingredients:
- 3 tablespoons egg whites
- 1 teaspoon oil
- 1 tablespoon water
Mix dry ingredients together in a small bowl (I used a small ramekin). Add wet ingredients and stir well.
Microwave 2 minutes. Remove muffin from ramekin and let cool slightly. Cut in half horizontally and toast. Top or fill, as desired.
