Greetings from the city where cocktails aren't just plentiful, they're darn near required on the hour -- New Orleans! I'm in NOLA this week for the Today's Dietitian Symposium. I spoke yesterday on all things blogging, hosting a 4 1/2 hour workshop that included how to find your blogging voice, improving your photography, SEO, Google Analytics, Disclosure and of course, my most recent passion project -- video

And by passion project I mean my never ending quest to get my fellow RDs to use their super smart brains to embrace how important becoming video integrated is to their overall communications platform.

I won't spend any more time in this post recounting why I think video is so important for RDs... (if you don't believe me, believe Facebook. They're the ones predicting video will take over the platform by 2019)... 'cause it's time to talk cocktails! (and after hearing me talk for 4 1/2 hours yesterday, I'm sure EVERYONE in the room -- including myself -- needed a good stiff drink!)

This month's Recipe ReDux is gearing up for summer with all things fun to be stirred, shaken and sipped. We challenged ReDuxers to share their favorite summer cocktail or mocktail.

I chose to recreate and redo a recent cocktail my husband had in Puerto Vallarta last fall. The restaurant's specialty drink was called "The Gong." Made table side, it consisted of vodka, strawberries, ginger, lime juice and mint. It was so refreshing and not too sweet. We've recreated it a number of times at home, but this time I didn't have any mint. Having cilantro instead, I thought I'd give it a try.

All you cilantro haters, don't hate. Just substitute mint if you can't do the cilantro thing. It's all good. You do you.

Strawberry Cilantro Cocktail

Yield

Serves 1

Ingredients

  • 2 - 3 medium-size ripe strawberries, halved
  • 1 (1-inch) piece fresh ginger, peeled cut into 2 pieces
  • 1/4 cup fresh cilantro leaves*, torn
  • 1 lime wedge
  • 1 1/2 fluid ounces vodka
  • Splash club soda or tonic*

Directions

  1. Muddle together strawberries, ginger and cilantro until crushed and juicy; add vodka and let stand 2 to 3 minutes. Fill a glass half-full with ice; strain strawberry mixture over ice. Squeeze juice from lime wedge into glass; top with a club soda. 

 

*The original idea for this cocktail included mint. If you're not a cilantro fan, mint is a wonderful substitute. Also, I prefer less sweet cocktails. Tonic can be used as an alternative to club soda for a sweeter drink.
