...or simply a bowl of soup.

It's not that I wouldn't like a big leisurely lunch. I just don't have the time... and plus, who wants to spend a lot of time in the middle of the day prepping big meals?

But I also don't like boring, ho-hum lunches either. I need something that's not only filling, but satisfying to taste as well. I may not have time for a long fancy lunch, but I like to pretend I do. 

To do that, I focus on key strategies like using a few high flavor ingredients -- goat cheese, feta, sharp cheddar cheese; pesto and sundried tomato paste; hummus and Dijon mustard. I also like sneak in a high-nutrient veggie whenever I can -- adding spinach, arugula or kale to open face sandwiches and reheated pasta. And very often, I'll add a sweet/salty combo to set off the dish and make it dynamic, without being labor intensive.

That's the idea behind my newest lunch combo -- Strawberry and Turkey Pinwheels --  I created for the California Strawberry Commission
