Savory French Toast Waffles via Immaeatthat.com

Makes 4 waffles

3 eggs
1 (.88oz) packet McCormick brown gravy mix
4 gluten free toaster waffles, frozen
1 cup cherry tomatoes
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon pepper
2 ounces pecorino romano, finely grated
¼ cup basil, chiffonade

  • Preheat oven to 400°F. 
  • Toss tomatoes in olive oil, salt and pepper.  Pour onto a foil-lined baking sheet and bake for 20 minutes, stirring halfway through.
  • Toast waffles until thawed.
  • In a shallow dish, whisk together eggs and McCormick brown gravy mix.
  • Soak waffles in the egg mix for 1 minute on each side.
  • In a skillet over medium heat, melt a little butter and cook the waffles until crisp on each. 
  • After you’ve cooked the waffles, place a circle of grated cheese in the skillet and place a waffle on top.  Cook until the cheese melts to the waffle and is crispy.
  • Serve waffles topped with roasted tomatoes and fresh basil.
