Today is Tuesday! Which means it's a great day to eat tacos. Actually, if I'm being honest, any day is a good day for tacos at our house. We're huge fans of Mexican and eat something taco-inspired at least once a week, usually more.
Since plain old chicken tacos can get a little boring, I'm always looking for ways to change things up. It's fun to experiment with different meats and toppings to find favorite new combos. Lately I've been loving pulled pork with feta and tomatoes and scrambled eggs in taco or quesadilla form for breakfast.
In case some of you are taco fanatics like me and are looking for some new ideas, I've rounded up some delicious recipes for you to try. There are some meat-based and some vegetarian options, plus some non-traditional taco-inspired recipes like casseroles and frittatas.
