Learn how to roast a whole chicken in a few simple steps!

I got married a month ago and am all for playing the domestic wife part.

I’ve been (was good), layering homemade lasagna (was not good), (haven’t tasted them yet), simmering bolognese sauce (was a success) and .

Before saying “I do,” I had never roasted an entire chicken.  But there are quite a few perks to this whole, whole-chicken thing.  (1) Your husband can’t say, “Why is there never anything to eat?!, (2) it’s cheaper, and (3) there is crispy chicken skin involved (not that I’m encouraging eating ALL the skin…but one bite of crispy skin will make you fall in love with roasting chickens. I promise you.)

So now I’m gonna show you how I roast a chicken.  Get ready for some naked chicken pictures.

First, buy a ~5 pound chicken.

Preheat your oven to 425F.  Cut open the bag and place the chicken in a roasting pan (or a foil tray or some sort).

Okay, now the slightly icky part.  Reach your hand into the chicken and pull out the delightful things inside.  Throw them away and move on.

Now, stuff the chicken with 1 lemon, quartered and 4 garlic cloves, chopped.

Pour on 3-4 tablespoons olive oil.

Generously sprinkle with salt and pepper (~2 teaspoons of each).

Place in the oven for 75-80 minutes, until chicken thigh (at the deepest point) reaches at least 165F.  I still practice the over-cook-everything-because-you’re-scared-you’re-going-to-give-yourself-food-poisoning technique…so I cooked mine a little longer.   {Note: If the chicken starts to smoke, add a cup or two of water to the roasting pan.}

Now, call your mother-in-law and tell her what you’re capable of.

What to do with your roasted chicken? Definitely make quesadillas with it.  Definitely.  And then another night serve some chicken up with baked sweet potato fries.  Yes.
