These Chickpea Salmon Burgers are a nutritious and budget-friendly recipe that works well for lunch or dinner!

Yes, there are some expensive foods that are healthy {as well as plenty of unhealthy foods, I might add}. However, there are almost always less expensive alternatives.

Take salmon for example. Fresh Wild Alaskan Salmon sure isn't cheap. Delicious? Absolutely! Inexpensive? Not usually.

Salmon is too tasty and too healthy to pass up though. What's a budget-conscious girl to do?... Take a stroll down the canned foods aisle. There you'll find options that are both nutritious and frugal.

Canned wild Alaskan salmon is definitely budget friendly at over 1/4 of the price per pound as fresh.

I always have canned salmon in my pantry, and I happen to use it often. Gimme a can of salmon and an egg, and I'll come up with something {before the Chickpea Salmon Burgers, my favorite were these Avocado Salmon Burgers}.

Usually, I use a few cans of canned salmon but because I wanted to make this recipe extra frugal, I added a can of chickpeas to stretch the salmon.

These Chickpea Salmon Burgers are a nutritious and budget-friendly recipe that works well for lunch or dinner!

They're pretty quick and easy to make. You just mash up your chickpeas then add in an egg and your spices. Mix this up really well; then you'll add in the salmon and red bell peppers. You don't want to stir this too much because your salmon will break up and turn kind of mushy.

Before you cook the salmon burgers, shape and refrigerate them for at least 15 minutes. This will help them hold together much better when cooked.

Then go ahead and heat the oven. Cook your salmon burgers on one side for about 7 minutes, until your salmon burgers easily flip over. Don't flip them too early or you'll risk breaking them {these babies are fragile}.

Once they've been cooked on one side, you pop them in the oven and bake for 10 minutes until they're done. And there you go, it's time to eat your burgers! Your delicious, frugal, nutritious burgers.

Chickpea Salmon Burgers

Yield

Makes 3 burgers

Ingredients

  • 1 cup chickpeas
  • 1 egg
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon salt
  • 1 (6-ounce) can wild Alaskan salmon, drained
  • 1/4 cup diced red bell pepper
  • 1 teaspoon oil (coconut or olive oil)

Directions

  1. Mash chickpeas in a bowl. Stir in egg, lemon juice, garlic powder, paprika, cayenne pepper, and salt. Make sure to stir really well.
  2. Stir in salmon and red bell pepper, just until incorporated. Try not to overmix. Shape into 3 patties, and refrigerate for at least 15 minutes.
  3. Meanwhile, preheat oven to 375*F. When ready to cook, heat oil in a oven-safe skillet. Add burgers and cook for about 7 minutes, until burgers easily flip. Flip burgers and transfer skillet to the preheated oven. Bake for 8-10 minutes until lightly browned. Enjoy!
