A healthy flourless cookie recipe that anyone can enjoy!
When you've been in the recipe development business as long as I have, food blogging life can feel a little like BTDT at times. Cookies - not new. Chocolate chips - not new. But fortunately, a bag of "allergen friendly" chocolate chips - now that's something new.
This month's Recipe ReDux theme is all about trying new to you ingredients. Truthfully, there is a whole world of recipes out there I have yet to try, but it requires breaking with norms to find them. Case in point -- I just returned from a sponsored trip to London where I had Pheasant and Trotters Pie. Yes. Pheasant, as in small pigeon like bird, and trotters, which can best be described as pig's feet.
I was too short on time after my return from England to offer you guys up a recreation of that pie. I know you're crushed. And plus, pheasant isn't exactly something ALDI is stocking in their meat case. But fortunately, before I left I'd pulled out a bag of dairy-, nut- and soy-free chocolate chunks for these Flourless Peanut Butter Chocolate Chunk Cookies.
A word about "why" I had this bag of chocolate chunks to begin with. For the most part, I don't think anyone around my house needs allergen friendly chocolate chips. The dietary issues my husband has don't really require modifications that these chocolate chunks meet. But the thing I've learned since starting this blog and Healthy Aperture overall is that there are lots of you out there for whom a product like this might mean the difference between chocolate chip cookies or not. And let's face it -- everyone needs a little chocolate chip cookie in their life, right? Along with Pheasant Pie, of course. But that recipe will have to come another day.
What I've done with these cookies, though, is make them delicious, regardless of allergy status. I've pumped up the fiber by using flax and chia instead of flour. They are hands down one of the most well received cookies I've made in recent years. Everyone in my house loved them. I hope you do too.

Flourless Peanut Butter Chocolate Chunk Cookies
- 1/4 cup ground chia seeds
- 1/4 cup ground flax seeds
- 1 cup peanut butter
- 3/4 cup brown sugar
- 1 tablespoon honey
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- Pinch of salt
- 1 egg
- 1 cup chocolate chunks (I used Enjoy Life Mega Chunks)
- Preheat oven to 350 degrees F.
- Combine all ingredients (except chocolate chunks) in bowl of a stand mixer; mix until combined.
- Add chocolate chunks and mix until combined. Spoon by rounded tablespoons onto a lined baking sheet.
- Bake for 15 minutes. Remove from oven and let stand on baking sheet for 5 minutes; cool completely on a wire rack.
