When we come up with themes for The Recipe ReDux or sponsors challenge us (as in today's ReDux), often I have to sit and think a bit to decide what type of recipe to share. It's especially challenging when recipes are outside of my normal food fare (Like the little fish cakes I made from sardines for The Recipe ReDux years ago. They sound yuck, but they're so good! Reminds me that I need to share that recipe with you guys. Soon. Very soon.) 

Anyway, then again sometimes, I get lucky. The challenge is so "me" and the way I eat, that it's a no brainer. That's the case with this week's recipe contest being sponsored by Real California Milk, which focuses solely on snack recipes... but not just snacks mid-afternoon or mid-morning -- anytime snacks. 

I love this theme because that's truly how many of my meals come together -- simple pairings of reasonable portions of nutritious foods. When you say "meal" it conjures up images of belabored cooking. But snacks can be a simple combo of a few food groups that combine to make a tasty, healthy small meal.

Today's toast recipe is a classic from my kitchen. I almost always have the ingredients on hand and it takes no time to prepare. I regularly eat this for a late afternoon snack or sometimes as lunch. There's no irony lost on me that Real California Milk is sponsoring this contest, given that I seldom have a meal or snack that doesn't have a little dairy in it. I mean, let's be honest -- cheese, yogurt and milk make everything better!

Feta Hummus Toast

Yield

Serves 1

Ingredients

  • 2 tablespoons hummus
  • 1 slice whole grain bread, toasted
  • 1/4 cup cherry tomatoes, halved
  • 1 tablespoon pitted black olives, halved
  • 1 tablespoon Real California Crumbled Feta Cheese

Directions

  1. Spread hummus over bread slice and top evenly with remaining ingredients.
