I can remember foods being canned at my Mawmaw Ween's house during the summer. There were all kinds of nifty contraptions to make it happen -- pressure cookers, jar racks, weird looking tongs to lift the jars in and out. It was quite the ordeal. And while I still admire folks who take the time to slow down and preserve this tradition (<-- see what I did there), I am not those folks. As we've established, I'm working at a utilitarian pace in my kitchen, and as such, this just isn't one of the traditional kitchen rituals for which I'm willing to allocate my time. 

That said, the minute those first strawberries start popping up at roadside farmers markets (like right now!), my mind goes straight to jellies, jams and buttery biscuits. 

I'm in the process of perfecting my buttery biscuits, but that's no reason to delay on jams and jellies. So if you're headed to the farmers' market this weekend, swinging by a roadside stand or just grabbing some (finally) in-season berries at your local grocer, you'll want to check out our Editor Picks below. I've rounded up my favorite choices for jams you can make that don't require canning. The secret is that they all use chia seeds as a thickener. If you've never tried chia, you'll be amazed at how easily it recreates that jel quality ordinarily reserved for the boiling/canning method that relies primarily on fruit pectin. 

Of note, though... as a seed, chia is.... well, seedy. So if you're looking for a very smooth, jelly-like consistency, these may not be for you. But I've always been a "seeds in my jam? no problem" kinda gal. Seriously... I live life on the edge, you know?
