I can’t even wait to tell you about how you should be making your Brussels sprouts.

But first, let me give you a wee-bit of background on why I decided to cover the little nutrient-dense grenades (too much?) in pita chips and peanuts and cilantro and sweet chili sauce.

Recently, somewhere in the midst of my I-want-everything-crunchy-and-salty life, I’ve become quite obsessed with pita chips.  Specifically these pita chips.   Andrew got home from work the other day and gave me a hug and then promptly asked if I had just eaten an entire clove of garlic.  I had been doing some pita chip munching and justified weeks ago that they are totally worth the garlic breath.  So I’ve been pita chipping quite a few things like...

Salad.

Stir-fry.

And I’m feeling a savory pita chip topped greek yogurt snack in my foreseeable future.

Now I’m not sure if adding a sweet chili sauce from Thai Kitchen makes these Brussels sprouts Thai enough to put the word “Thai” in the recipe title…but let’s go with it. 

And speaking of Thai things…have you even tried these Thai enchiladas? They are one of my favorite dinners to make when I know I want something delicious but don’t know what I want, which happens way more than I think it should for someone who writes a food blog.  I feel like I should always have food made and a knack for getting dinner on the table every night with ease…but that doesn’t happen all the time and then this happens

It happens.  And I love every single bite of it.

And another thing that happens is Brussels sprouts become crispy and perfect when tossed with olive oil and baked at a high heat in the oven.  And then I also love every single bite of those too.  There's quite a bit of food love going on.

So toss your Brussels in a bit of sweet chili sauce and get ready to love Brussels even more.

We served these for dinner with slow baked salmon and a tomato + feta cheese + balsamic vinegar salad.  It was easily my favorite dinner of the week.

Crispy Thai Brussels Sprouts

Yield

serves 4-5 as a side dish

Ingredients

  • 1 pound Brussels sprouts, trimmed and sliced in half
  • 2 tablespoons olive oil
  • Salt and Pepper
  • 2 tablespoons sweet chili sauce
  • 1/2 cup pita chips
  • 1/4 cup raw peanuts, roughly chopped
  • 3 tablespoons fresh cilantro, roughly chopped

Directions

  1. Preheat oven to 400ºF. 
  2. Place pita chips into a plastic, sealable bag and crush as much as you can.  Set aside.
  3. On a baking sheet, toss together trimmed/sliced Brussels sprouts, olive oil and salt/pepper.  Turn all Brussels cut side down on the baking sheet.  Bake for 14-16 minutes, or until the cut side is brown and crispy.  Flip all Brussels to the other side and bake for 5 more minutes.  Remove from oven and scoop warm Brussels into a bowl.  Add in sweet chili sauce and toss until all Brussels are coated.  Top with peanuts, crushed pita chips and fresh cilantro.  Serve right away while the pita chips are still crunchy.

{Note: These don’t reheat very well since the pita chips and peanuts get soggy.}
