I've been meaning to share this recipe with you all week. I'm at the beach and as I'm sure you can imagine, blog writing hasn't jumped to the top of the list of family activities.

There's been pool time, beach time, crab hunting, ice cream eating, power washing, pancake making, outlet shopping, farmers' marketing, shrimp sauteeing... not necessarily in that order. But blogging didn't make the cut. 

(There's also been the occasional plea on social media for SOMEBODY, ANYBODY PLEASE to help me figure out why I don't have Instagram stickers in my Instastories. If you're an IG expert, please let me know if you have any ideas why I, as an iPhone 7+ user with an updated app would not being seeing IG stickers in my Instastories for ReganJonesRD. And please note, I have them for HealthyAperture, which makes their absence all the more maddening. #FACEPALM.)

Anyway, back to the beach. Aside from keeping me occupied and not sitting at this computer, all this fun in the sun means I'm serving up family and friends SIMPLE recipes. No place is that easier to accomplish than in my appetizer offerings. 

Today's recipe for this month's Recipe ReDux contest is no exception. These Crackers with Fig Jam and Gorgonzola are a 3 ingredient appetizer idea is simple enough to set out at a moment's notice when you're looking for a sweet, creamy, salty and crunch snack treat. But they're also special enough to serve at parties.

I assembled the recipe using a Quick Fig Jam recipe I recently created after realizing the last of my grandmother-in-law's fig preserves were no more. My husband and I LOVE fig preserves. This simple recipe doesn't exactly recreate the plump, saucy sweetness of homemade preserves (since it uses dried figs). But it does provide a deep, rich figgy base that pairs perfectly with ginger to give you a smooth jam to spread over either my Kefir Cream Biscuits, Gluten Free Biscuits OR a top a hearty cracker with a sprinkling of creamy gorgonzola cheese. 

And speaking of crackers, I should note that today's recipe contest is sponsored by Breton Crackers. I figured out years ago after I graduated from saltines, that whether you're prepping for a special occasion or just a quick snack, using a high-quality cracker like Breton with its tender-crisp texture makes each bite better. Crackers with Fig Jam and Gorgonzola

Makes 18 crackers (6 servings)

Ingredients

  • 18 Breton Original Crackers
  • 3/4 cup Quick Fig Jam* or thick fig preserves
  • 3/4 cup crumbled gorgonzola cheese

Directions

  1. Spread each cracker with 2 teaspoons *Quick Fig Jam; sprinkle with 2 teaspoons cheese.
