This simple blueberry smoothie is creamy and delicious!

January is not normally the time of year you think about smoothies, but we are a little smoothie-obsessed at our house. Especially this month, as I am getting ready to start my winter session of Nourish, a 21 day clean eating program that I run each season.  I’ve been creating and testing delicious smoothies for the past few weeks and this one has become a favorite. It’s loaded with blueberry delicious-ness and it tastes amazing.

This Coconut, Kale & Blueberry Smoothie is creamy and delicious.

This smoothie is a little different than my usual because I used fresh berries.The base for my smoothies is usually frozen fruit, but today I had some fresh blueberries that needed eating. I did happen to have a frozen banana handy, so that certainly helped make it nice and cold. The rest of this smoothie consisted of some favorite ingredients…baby kale, avocado, coconut, dates and other delights.

If you’re new to adding greens to your smoothies you might want to start with baby spinach vs kale. I’ve found that the spinach taste is barely detectable in smoothies. If you’re still a little leery, you could add flavored protein powder to the smoothie, too. I don't love doing this because protein powder tends to mask all of the flavors. 

I also added a few dates for some sweetness, as blueberries alone might not be sweet enough for some of you. I prefer to use natural sweeteners when needed. A few other ways to sweeten up a smoothie are cinnamon, vanilla extract, honey or maple sugar. You could also use coconut water for your liquid, instead of coconut milk.

Coconut, Kale & Blueberry Smoothie

Yield

Serves 1

Ingredients

  • 1 cup blueberries, fresh or frozen
  • 1/2 avocado
  • 1 banana, frozen
  • 6-8 ounces coconut milk, unsweetened
  • 1 cup fresh kale leaves
  • 1 tablespoon blueberry flavored flax seeds
  • ½ teaspoon vanilla extract
  • 1 Tbsp shredded coconut (unsweetened)
  • 2-3 dates, pitted

Directions

  1. Blend all ingredients in a high powered blender until smooth.
