Summer time is here! And with it comes a beautiful lack of routine.
All school year long I look forward to the days that don't make me jump out of bed and head straight to the kitchen to make lunches, help everyone dress and drag sleeping children out of bed to drive siblings to school.
There's the slow way that we get to go through our days. Each week offers up a new itinerary... Beach trip, road trip, new camp, friends in town, nothing much to do. The calendar is full of all sorts of different things.
The one thing that has proven to be constant, so far, is the voracious appetite of my kids. I feel like I'm in a perpetual state of food prep, kitchen cleaning, dishwasher unloading, or meal planning. I am a vending machine. Constantly pumping out food to these small (apparently growing) people.
Therefore, the snacks and meals that have staying power and can fend off the hunger for more than a cotton-picking minute is key. But it also has to be something they'll eat!
This is where my nut butter bowls come in. Loaded with healthy nut fat and high in protein, this is a snack (or meal) that I know feeds them well and keeps them full. I topped this one with fresh cherries, some dark chocolate, and a sprinkling of sliced almonds for a good crunch. My kids love these things! I'm pretty sure they feel like they're eating dessert, but I know better.

Chocolate Cherry Nut Bowl
- 1/4 cup crunchy organic peanut butter
- 2 tablespoons chopped cherries, pits removed
- 2 tablespoons chopped dark chocolate
- 1 tablespoon sliced almonds
- Spoon peanut butter into a bowl.
- Top with cherries, chocolate, and almonds.
