So I think that making pizza on a Tuesday makes a weeknight feel more like a weekend.

I'm all about lowering my stress levels during the week and making homemade pizza on a random Tuesday helps do just that.  Rolling out the dough, adding the toppings, waiting until the cheese gets all bubbly and crisp in the oven...it's all a way to force yourself to slow down and just focus on creating something.  And for me, creating things is such a great self-care practice.

Plus, sometimes just knowing what is for dinner (and knowing that you are looking forward to that dinner) can bring a lot of relaxation to an otherwise tiring day when you end up at home exhausted with no idea what to make for dinner. 

So when I'm craving it, Tuesday night pizza night has become a thing.  At our grocery store they sell frozen balls of pizza dough, so I have a few in my freezer for when a pizza craving calls.  I put the frozen pizza dough in the fridge Tuesday morning to thaw and on Tuesday night pizza making commences.  My mom always said that remembering to thaw food is the hardest part of cooking.  AGREED.

The toppings I've used on these pizzas have varied quite a bit.  But there is typically a protein source, a fat source (oh hay, cheese!) and some kind of fiber (greens & zucchini went on this pizza).  I would say that my favorite part of this pizza would have to be the caper addition.  They add that salty bite that goes so nicely with pizza crust.  If you are an anchovies on your pizza type of person, then you will love the capers. 

And now I really wanna pizza oven.

Cheesy Zucchini & Greens Pizza (for Meat Lovers.)

Yield

serves 4-5

Ingredients

  • 1 frozen store-bought pizza dough
  • 1/2 cup pizza sauce
  • 1 cup sharp cheddar, grated
  • 1/2 cup fontina, grated
  • 1/3 cup parmesan, shaved
  • 2 tablespoons capers
  • 1 lb. browned ground beef (fully cooked!)
  • 2 small yellow zucchini
  • 1 cup greens (i used a kale-spinach-arugula blend)

Directions

  1. Preheat oven according to pizza dough directions
  2. Roll out pizza dough and top with all toppings.  Cook until crust is cooked through and cheese is melted and bubbly.
  3. Slice and perhaps serve with a glass of red wine.
