Before I introduce you to what I'm sure is going to be your favorite new vegetarian black bean chili, please tell me you've tried this:

No? Wait... Surely it's because you didn't have any white beans on hand.

I bet you thought you did when you checked your pantry, right? But no. It was a can of black beans. 

Well, my friend, today is your lucky day.

Impressed (with myself) over how easy and tasty that white bean chili turned out (pairing white beans with hummus to make a quick and easy chili is by far one of my better ideas), I had another bright idea to do exactly the same thing with black beans... only pumpkin in place of the hummus, 'cause, well, you know... #AllThePumpkinThings. 

I know, I know. Pumpkin is sooooo yesterday or worse....  (Starbuck's, you may not be responsible for most of the world's problems, but you're definitely responsible for #pumpkinfatigue). But it's such a fine addition to this chili. It's a subtle savory addition and a wonderful way to thicken this chili without flour or break out the hand blender. 

So grab that can of pumpkin and black beans out of the pantry and turn on your slow cooker. A vegetarian black bean chili dinner will be waiting for you in just a few hours. Enjoy!

Black Bean Pumpkin Chili

Yield

Makes 3 cups (serving size = 1 cup)

Ingredients

  • 3/4 cup canned pumpkin
  • 1 cup water
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 cup salsa verde
  • 1 tablespoon honey
  • 1 teaspoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Juice of 1/2 a lime

Directions

  1. Combine all ingredients in a slow cooker and cook on low 4 hours.
