Gluten Free Choco-Cherry Snack Bars

These Chocolate-Cherry Snack Bars are the perfect healthy snack/bean based dessert. Protein-rich and fiber filled, they’re made with canned soybeans, which provide 3 times as much fiber, twice as much protein and iron and are 6 g lower in carbs than black beans.

#Truth, Meme, truth. Give me a microwave and some quirky ingredients, and I'll have breakfast on the table in a flash.  

They "why" behind why I like unconventional cooking likely involves all the years I've seen similar recipes cross my desk. I've been on this recipe-go-round world of food for nearly 20 years. And while I've [mostly] loved it all, I've come to appreciate that there really are few new recipes or recipe ideas...

...except when it comes to the weird stuff -- microwave English muffins, low-carb tortillas and bean based desserts. These are the dishes that grab my attention.

The first time I made these Choco-Cherry {Bean Based Dessert} Snack Bars -- was just after my oldest son started Kindergarten.

Time flying like it does, my youngest son started Kindergarten last week... and so I've declared open season on afternoon snacks with mom.

Serving healthy snacks to kids, of course, doesn't always have to mean a baked good from the kitchen. But my form of kitchen therapy usually involves a mixer, an oven and a random combination of bakeable ingredients. And if they can be a little quirky and weird ingredients, I'm even happier.

Gluten Free Choco-Cherry Snack Bars


Makes 9 bars


  • 1 (15-ounce) can soy beans, drained, rinsed & dried on paper towels
  • 3/4 cup sugar
  • 2 tablespoons olive oil
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon freshly grated orange zest
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup old-fashioned oats
  • 2/3 cup dried cherries
  • 1/3 cup chocolate chips


  1. Preheat oven to 350 degrees F.
  2. Blend everything (except oats, cherries and chocolate chips) in the bowl of a food processor in order listed, pulsing between each addition. Before adding oats, cherries and chocolate chips, process mixture until very well blended and very smooth. Add oats and cherries, pulsing just until blended. Pour into an 9- x 9-inch baking dish coated with cooking spray and sprinkle with chocolate chips.
  3. Bake for 35 minutes or until a wooden pick inserted in center comes out clean. Let stand at least 20 minutes before slicing. Store in refrigerator.
