You'd think working in food and recipes all-day everyday I'd have it completely under control in the menu planning department.
You'd think that. But you'd be wrong.
I regularly find myself picking kids up from school and "swinging" (sounds so casual, but usually it's a frantic rush) by the store to pick up something I can cook for a quick dinner. I'll be the first to admit this frantic rush for dinner ingredients isn't the best strategy, but it is my reality. I'm working on getting a better plan in place for the week. And one way I'm doing that is by being my own customer.

Apple-Carrot Farro and Rice Salad
- 1/2 cup dry farro
- 1 apple, diced
- 1 carrot, diced
- 1/4 cup orange juice
- 1 teaspoon balsamic vinegar
- 1 teaspoon honey
- 2 teaspoons dried rosemary
- 1/4 cup chopped pecans
- 1/2 teaspoon Kosher salt
- 2 cups cooked rice
- Cook farro according to package instructions. Once cooked, drain any excess water and set aside to slightly cool. In the meantime, prepare remainder of salad by combining all ingredients in a large bowl and tossing to mix. Mix in farro. May be served hot or cold.
