Being the good Facebook friend that I am, I posted this to my peeps on Monday afternoon:


With just 3 ingredients and a high powered blender, this Creamy Tomato Soup made with cottage cheese is ready in minutes!

 

And then my dear friend Gretchen commented, wondering how in the world I get in this much TV time? 

One word, Gretchen -- Treadmill. 

If you're someone who's struggling for a little "me" time to binge watch Netflix, let me assure you -- you can pile up some serious treadmill mileage watching an entire season of Scandal. #BTDT 

Finally realizing that I could watch Netflix while running on a treadmill has truly been transformative... not in the "my body looks amazing" transformative sense. (Because it doesn't. Running feels great from a cardio standpoint, but I've finally learned weights are the only way to start seeing a shift in your body shape.) I mean transformative in the sense of "I can't wait for 4 o'clock to get here so I can go to the gym... to watch Scandal." 

So there. That's my big secret. I make time for Netflix (and Amazon... don't miss Orphan Black mentioned above) by combining exercise and binge watching. I also make time by relying on overly easy recipes like this:

This protein-packed, ultra-easy tomato soup was a spur of the moment idea to use up the last of my cottage cheese and leftover marinara (The Cottage Cheese Egg Salad was the crowd pleaser I posted last week, ICYMI). I'm almost embarrassed to share both, they're so easy. The key with the soup, though, is to really get a smooth consistency using a high-powered blender. 

I used a new NutriBullet 900 that was sent to me as a free sample (Thanks NutriBullet!). I was UH-MAZED at how much better it worked than the old Cusinart blender I've been using. I'm late to the high-powered blender game, but I see now what all the fuss is about. I've been using this new NutriBullet to make smoothies (of course) and didn't really realize how "not smooth" my smoothies were up until now. And it makes ALL the difference this soup.

Trust me -- creamy tomato soup is good. Tomato soup with chunks of cottage cheese? Not so much.

So if you're in the market for a high powered blender without the high price tag, this is the blender for you.

And with that, I leave you to make smoothies, soups and binge watch Netflix on a treadmill. You can thank me later.

3 Ingredient Creamy Tomato Soup

Yield

Makes 1 serving

Ingredients

  • 1/2 cup marinara sauce
  • 1/2 cup water or broth
  • 1/2 cup cottage cheese

Directions

  1. Place all ingredients in a high-speed blender (I used a NutriBullet) and process until smooth. Warm over low heat in a saucepan or in the microwave on HIGH, covered, 2 minutes or until desired temperature.
